Cajun Pasta with Smoked Sausage

Spicy fettuccine with sausage and veggies cooks up quickly in just 25 minutes.
Ingredients:
  • 8 oz uncooked fettuccine
  • 2 tablespoons vegetable oil
  • 1 large onion, chopped (1 cup)
  • 2 medium red or green bell peppers, thinly sliced
  • 3 cloves garlic, finely chopped
  • 1 package (14 oz) smoked sausage, cut into 1/2-inch slices
  • 1 can (28 oz) Muir Glen™ organic fire roasted crushed tomatoes, undrained
  • 1 tablespoon Cajun seasoning
  • 1/2 cup whipping cream
  • 1/2 cup shredded Parmesan cheese (2 oz)
Instructions:
  • Cook the fettuccine in a 5-quart Dutch oven according to package instructions. Drain and return to the Dutch oven, covering to keep warm.
  • In a large nonstick skillet, heat oil over medium-high heat. Sauté onion, bell peppers, and garlic for 3 to 4 minutes until crisp-tender. Add sausage and cook for an additional 3 to 4 minutes until vegetables are tender.
  • Combine tomatoes and Cajun seasoning into the sausage mixture, then gently swirl in the whipping cream. Simmer uncovered for 5 to 8 minutes, stirring occasionally, until the mixture thickens to perfection.
  • Combine the sausage mixture with the fettuccine in a Dutch oven, ensuring they are evenly mixed. Top with cheese and fresh parsley, if preferred.
