Cake Mix Oatmeal-Raisin Cookies

Make easy and tasty oatmeal cookies using Betty Crocker™ cake mix.
Ingredients:
  • 1 box Betty Crocker™ Super Moist™ Yellow Cake Mix
  • 1/2 cup packed brown sugar
  • 1/2 cup butter or margarine, softened
  • 1/2 cup shortening
  • 2 tablespoons water
  • 1 1/2 teaspoons ground cinnamon
  • 1 egg
  • 2 cups quick-cooking or old-fashioned oats
  • 1 cup raisins or chopped dates
  • 1/2 cup chopped nuts, if desired
Instructions:
  • Preheat the oven to 375°F (350°F for dark or nonstick pans). In a large bowl, use an electric mixer to blend the cake mix, brown sugar, butter, shortening, water, cinnamon, and egg until smooth, for about 1 minute. Then, gently fold in oats, raisins, and nuts with a spoon.
  • Spoon dough onto ungreased cookie sheets, leaving 2-inch space between each one, then gently press down to slightly flatten with your fingers.
  • Bake for 9 to 12 minutes until centers are soft. Let cool for 1 minute, then transfer from cookie sheets and store covered.
