Calamari in a Creamy White Wine Sauce

Indulgent creamy calamari linguine with spicy white wine-basil sauce. Effortlessly elegant.
Ingredients:
  • 0.5 pound linguine pasta
  • 2 tablespoons olive oil
  • 3 cloves garlic, crushed
  • 8 ounces squid, cleaned and cut into rings and tentacles
  • 0.75 cup white wine
  • 3 cherry peppers, thinly sliced
  • 2 tablespoons cornstarch
  • 1 cup cream
  • crushed red pepper flakes to taste
  • salt and pepper to taste
  • 0.5 cup shredded fresh basil
  • 0.25 cup freshly grated Parmesan cheese
Instructions:
  • Bring a large pot of salted water to a lively boil. Add pasta and cook until al dente, about 8 to 10 minutes. Drain the pasta.
  • In a large skillet over medium-high heat, heat olive oil. Add crushed garlic and sauté until golden brown. Add squid and cook until white. Pour in white wine and cherry pepper slices, bring to a simmer, and cook until wine is reduced by half, around 3 minutes.
  • Combine cornstarch with the cream and pour into the bubbling calamari. Season with red pepper flakes, basil, salt, and pepper, stirring until the sauce thickens. Toss the pasta with the sauce and garnish with Parmesan cheese before serving.
