Delight in a sumptuous mixed seafood salad featuring a medley of scallops, mussels, shrimp, and calamari tossed in zesty olive oil, lemon juice, and herbs, served atop fresh mixed greens.
Ingredients:
  • 0.5 pound sea scallops
  • 0.25 pound medium shrimp
  • 0.5 pound fresh mussels
  • 0.25 pound calamari rings
  • 0.5 cup pitted kalamata olives
  • 2 tablespoons lemon juice
  • 0.33333334326744 cup olive oil
  • 1 large clove garlic, minced
  • 1 tablespoon minced fresh parsley
  • 1 tablespoon minced fresh chives
  • 0.25 teaspoon red pepper flakes
  • 1 lemon, sliced
  • 1 medium red onion, thinly sliced
  • 6 cups mixed salad greens
  • freshly ground pepper to taste
  • salt
Instructions:
  • 1. Bring a large pot of water to a boil. Add scallops, shrimp, mussels, and calamari and cook for 2 minutes. Drain the seafood, then peel the shrimp and shell the scallops and mussels.
  • Combine the cooked seafood and olives in a large bowl. Drizzle with lemon juice, olive oil, and sprinkle with minced garlic, parsley, chives, and red pepper flakes. Refrigerate for 1 hour before serving.
  • Plate the salad greens on 6 plates or in salad bowls. Top with seafood. Garnish with lemon slices and red onions. Season generously with salt and freshly ground black pepper.
