Delicious and nutritious bars perfect for outdoor adventures - packed with oats, almonds, and coconut.
Ingredients:
  • 0.75 cup all-purpose flour
  • 0.5 cup quick cooking oats
  • 0.25 cup toasted wheat germ
  • 0.5 cup butter, softened
  • 1 tablespoon orange zest
  • 0.75 cup packed brown sugar
  • 2 eggs
  • 0.75 cup blanched whole almonds
  • 0.5 cup shredded coconut
Instructions:
  • Preheat the oven to 350 degrees F. In a large bowl, combine flour, oats, butter, wheat germ, orange peel, and 1/2 cup of packed brown sugar. Mix at low speed until just combined, then beat at medium speed for 2 minutes until the mixture looks dry.
  • Shape the mixture into a ball using lightly floured hands, then press it into an 8" by 8" baking pan.
  • Whisk together eggs and 1/4 cup of packed brown sugar in a small bowl. Mix in almonds and coconut. Pour the mixture evenly over the contents in the pan.
  • Bake for 35 minutes or until a toothpick inserted comes out clean. Allow to cool in the pan on a rack, then slice into 12 pieces.
