Try this delicious one-pot bacon frittata from Betty Crocker's Heart Healthy Cookbook for a perfect breakfast option!
Ingredients:
  • 1 1/2 cups fat-free cholesterol-free egg product or 6 eggs
  • 2 tablespoons chopped fresh chives or 1 tablespoon freeze-dried chopped chives
  • 2 tablespoons fat-free (skim) milk
  • 1/8 teaspoon dried thyme leaves
  • 1/8 teaspoon pepper
  • 1/4 cup chopped red or green bell pepper
  • 2 cups refrigerated southern-style hash-brown potatoes
  • 1/2 cup coarsely chopped Canadian bacon or cooked ham
  • 2 tablespoons shredded Cheddar cheese
Instructions:
  • Combine egg product, fresh chives, milk, salt, thyme, and pepper in a medium bowl, beating until well blended; then set aside.
  • Prepare a 10-inch nonstick skillet with cooking spray. Sauté bell pepper over medium heat for 1 minute. Add potatoes, cover, and cook for 8 to 10 minutes until they start to brown, stirring occasionally. Mix in Canadian bacon and cook for an additional 1 to 2 minutes until heated through.
  • Pour the beaten eggs into the skillet, cover, and cook over gentle heat until fully cooked and set, about 6 to 9 minutes. Make sure to gently lift the edges of the omelette occasionally to let the uncooked egg mixture run to the bottom of the skillet.
  • Top with a generous amount of cheese, covering the dish completely. Cook until the cheese is perfectly melted, for about 1 more minute. Serve in wedges.
