Delicious stacked breakfast: Whole-grain toast with collard greens, scrambled egg whites, Canadian bacon, cheddar cheese, and broiled to perfection.
Ingredients:
  • 1 pound collard greens, rinsed and trimmed
  • 1 onion, chopped
  • 0.25 pound salt pork
  • 6 egg whites
  • 4 thick slices Canadian-style bacon
  • 4 thick slices whole-grain bread, toasted
  • 1 cup shredded Cheddar cheese
  • 2 tablespoons chopped fresh chives
Instructions:
  • In a large saucepan, combine collards, onion, and salt pork. Cover with water and simmer over medium heat until greens are tender (about 15 to 20 minutes). Drain, remove pork, and keep the greens and onions aside.
  • Spritz a nonstick skillet with cooking spray and warm over medium high heat. Add in egg whites, season with salt and pepper, stirring constantly until cooked to your liking.
  • Spray a nonstick skillet with cooking spray and heat over medium-high heat. Cook Canadian bacon on both sides until lightly browned. Remove and drain on paper towels.
  • Create the stacks by layering on a broiler pan: start with bread slices, add 1 slice of Canadian bacon on each, then divide the greens, egg whites, and cheese equally. Broil until cheese is gooey and bubbly, finish with a sprinkle of chives, and enjoy!
