Candied Buddha's Hand Citron

Chef John's holiday treat: Easy, delectable candied Buddha's hand citron.
Ingredients:
  • 3 cups diced Buddha's hand (fingered citron)
  • 3 cups white sugar, divided
  • 2 cups water
Instructions:
  • Bring a large pot of water to a boil. Add diced Buddha's hand and simmer until citrus softens, about 30 minutes. Drain.
  • In a pot, combine the Buddha's hand, 2 1/2 cups of sugar, and water. Bring to a gentle simmer and cook, stirring occasionally, until the syrup reaches 230 degrees F (110 degrees C). Remove from heat and allow it to cool to room temperature. Drain the citrus, saving the excess liquid in jars.
  • Place the drained citrus slices on a wire rack to air dry until slightly sticky, for a minimum of 24 hours. Then, set aside a shallow bowl with the remaining sugar. Coat the citrus slices in the sugar by tossing them gently until fully coated. Place the coated slices on a plate to dry for at least 2 hours.
