Energize with cozy pumpkin spice pancakes drizzled in syrup.
Ingredients:
  • Butter, if desired
  • Maple-flavored syrup, if desired
  • 2 cups Original Bisquick™ mix
  • 2 teaspoons pumpkin pie spice
  • 1 1/2 cups buttermilk
  • 1/4 cup toasted pecan halves, finely chopped
  • 1 tablespoon finely chopped crystallized ginger
  • Pecan halves, if desired
Instructions:
  • Combine Bisquick mix, pumpkin pie spice, buttermilk, pumpkin, and eggs in a large bowl. Mix with a whisk or fork until well blended. Fold in chopped pecans and ginger.
  • Coat a nonstick griddle or skillet with vegetable oil and heat to 350°F or over medium heat.
  • Pour a generous 1/4 cup of batter onto the sizzling griddle for each pancake. Cook until edges are dry, then flip and cook until both sides are deliciously golden brown. Top with remaining ingredients before serving.
