Candied Kumquats

Quick and delicious candied kumquats, perfect for adding a sweet touch to dishes.
Ingredients:
  • 4 cups of roughly chopped kumquats (roughly 1-1½ lbs.)
  • 1 cup of water
  • 2 cups of sugar
Instructions:
  • Prepare the kumquats by roughly chopping them with a paring knife. Remove easily accessible seeds, but don't worry if some get chopped up or remain in the fruit. You can also leave small kumquats whole.
  • Prepare the syrup by bringing water and sugar to a boil over high heat. Simmer for 4 minutes before adding the kumquats. Simmer the kumquats in the syrup for an additional 10 minutes.
  • Separate the kumquats from the syrup using a sieve over a bowl. Simmer the syrup in a pan for 5 minutes to thicken it. Mix the kumquats with 1/4 cup of the syrup. Serve immediately or store in a jar in the refrigerator for up to two weeks.
