Cannellini bean and lemon salad

Host a delightful Italian feast for loved ones.
Ingredients:
  • 2 x 400g cans cannellini beans, drained, rinsed
  • 400g can chickpeas, drained, rinsed
  • 400g can lentils, drained, rinsed
  • 125.00 ml chopped fresh flat-leaf parsley leaves
  • 20.00 ml finely chopped fresh chives
  • 2 tsp finely grated lemon rind
  • 21.00 gm lemon juice
  • 1 small garlic clove, crushed
Instructions:
  • Mix together beans, chickpeas, lentils, parsley, and chives in a bowl.
  • Prepare the dressing by combining lemon rind, lemon juice, oil, garlic, salt, and pepper in a tightly sealed jar. Shake vigorously to blend the flavors.
  • Mix the dressing into the salad until well combined. Serve.
