Caprese Turkey Salad with Guacamole

Turkey Caprese Salad with Guacamole: Fresh, flavorful blend of mozzarella, tomatoes, red onion, and turkey breast, served with creamy guacamole.
Ingredients:
  • 1/4 cup balsamic vinegar
  • 1/4 cup water
  • 2 tablespoons olive oil
  • 2 tablespoons chopped fresh basil leaves
  • 1/2 teaspoon salt-free garlic-pepper blend
  • 1/2 medium avocado
  • 2 tablespoons fat-free (skim) milk
  • 2 tablespoons fat-free sour cream
  • 2 teaspoons fresh lemon juice
  • 1/4 teaspoon salt-free garlic-pepper blend
  • 1 package (20 oz) turkey breast tenderloins
  • 6 cups mixed salad greens
  • 1 pint grape tomatoes, cut in half (about 1 1/2 cups)
  • 1/4 cup thinly sliced red onion
  • 1/2 cup cherry-size fresh mozzarella cheese balls, cut in half
Instructions:
  • Prepare the grill by spraying the rack with cooking spray and heating up either a gas or charcoal grill. In a small bowl, whisk together all dressing ingredients until smooth. Set aside 1/4 cup of the dressing for later use in brushing the turkey, and keep the rest for serving.
  • Add all sauce ingredients into the blender. Blend on medium speed until smooth. Transfer the sauce to a small bowl and refrigerate until you're ready to serve.
  • Coat turkey with the flavorful 1/4 cup dressing. Grill turkey over medium heat, covered, for 8 to 10 minutes, flipping once, until the juice runs clear when the thickest part is cut (reaching at least 165°F). Transfer turkey tenderloins to a cutting board and slice into 1/2-inch strips.
  • Mix the salad greens, 1 cup of tomatoes, onion, and dressing in a bowl. Spread the mixture evenly among 4 plates. Place turkey strips on top of the salads. Add guacamole sauce, cheese, and the remaining 1/2 cup of tomatoes on each plate. Serve the salad with guacamole on the side.
