Surprise Easter friands with gooey caramel filling.
Ingredients:
  • 65.00 gm rice flour or plain flour
  • 50.00 gm ground almonds
  • 3 egg whites
  • 32.50 gm cocoa powder
  • 150.00 gm icing sugar
  • 75.90 gm canola oil or light olive oil
  • 84.98 gm milk
  • 6 small caramel Easter eggs
Instructions:
  • Preheat your oven to 180°C and grease 9 friand pans. In a large bowl, mix 1/2 cup rice or plain flour, 1/2 cup ground almonds, 1/4 cup cocoa powder, and 1 cup icing sugar. Create a well in the center of the dry ingredients.
  • Combine 1/3 cup canola or light olive oil with 1/3 cup milk and stir until smooth. Beat 3 egg whites with an electric beater until soft peaks form. Gently fold the egg whites into the almond mixture until just combined, then spoon into the friand pans.
  • Sprinkle 6 small caramel Easter eggs, roughly chopped, on top. Bake for 15-20 minutes until spongy. Let cool in the pans, then dust with extra icing sugar before serving.
