Ingredients:
  • 36.80 gm vegetable oil
  • 62.50 ml popping corn
  • 2.40 gm sea salt
  • 95.00 gm caramel choc bits
  • 90.00 gm brown sugar
  • 100g butter, chopped
  • 83.75 gm golden syrup
  • 125.00 ml granulated nuts
Instructions:
  • Prepare a 16cm x 26cm slice pan by greasing it and lining it with baking paper.
  • Heat oil on medium heat in a large saucepan until a few corn kernels added start spinning slowly to indicate the oil is hot enough.
  • Combine the remaining corn and salt in the pan, cover with a tight-fitting lid, and gently shake until popping stops. Transfer the popcorn to a large bowl and let it cool for 15 minutes before adding the caramel chocolate bits.
  • In a saucepan over medium heat, combine sugar, butter, and syrup. Stir until the butter has melted and sugar has dissolved, about 5 minutes. Bring the mixture to a boil and cook until it turns golden, about 6 to 8 minutes.
  • Take the pan off the heat and mix in the nuts. Pour the mixture over the popcorn and stir to cover. Transfer the mix to the prepared pan. Place a piece of parchment paper over the top and press down firmly. Let it sit at room temperature for an hour until it cools. Cut into 16 bars and serve.
