Caramel S'more Cups

Elevate caramel cookies with Betty Crocker® mix for an easy and delightful treat!
Ingredients:
  • 1 pouch (17.5 oz) Betty Crocker™ Chocolate Chip Cookie Mix
  • 1/2 cup butter or margarine, softened
  • 36 round chewy caramels in milk chocolate, from 5 (1.91-oz) rolls, unwrapped
  • 108 mini marshmallows (1 cup)
  • 1/2 cup semisweet chocolate chips
Instructions:
  • Preheat oven to 375°F and generously coat 36 mini muffin cups with cooking spray.
  • Prepare the cookie dough according to the package instructions, using butter and egg. Roll the dough into 36 (1-inch) balls and place one ball in each muffin cup.
  • Bake for 8 to 9 minutes until edges turn golden. Take out from the oven and gently press 1 candy into the center of each cookie until level with the top. Add 3 marshmallows on top of each cookie and bake for an additional 2 to 4 minutes until marshmallows puff up. Allow it to cool for 30 minutes, then carefully loosen the cookies with a small metal spatula and transfer them to a cooling rack. Let them cool completely.
  • Add chocolate chips to a small resealable freezer bag. Microwave on High for around 1 minute or until soft. Carefully massage the bag until the chocolate is silky, then snip off a small corner of the bag. Drizzle the chocolate over the marshmallows and allow it to set for about 10 minutes.
