Caramelised custard and strawberry trifles

Elegant strawberry trifles with caramelized topping.
Ingredients:
  • 250g piece Madeira cake
  • 52.80 gm strawberry jam
  • 350g strawberries, hulled, sliced
  • 60.00 gm (1/4 cup) caster sugar
  • 125ml dessert wine
  • 500g tub Premium Vanilla Custard
  • 250g mascarpone
Instructions:
  • Slice the madeira cake horizontally.
  • Coat both sides with jam, then dice into small cubes and combine in a large bowl with half of the strawberries.
  • In a blender or food processor, blend the remaining strawberries with 1 tablespoon of caster sugar until smooth. Mix the puree into the cake gently. Sprinkle with wine or sherry. Divide the mixture among 4 heatproof glass dishes or cups, then top with half of the custard.
  • Preheat the grill to high. Whip together the mascarpone and remaining custard until thick. Spread over the trifles and sprinkle with the remaining 2 tablespoons caster sugar. Caramelize the sugar by placing the trifles under the grill or using a domestic blow torch.
