Caramelised onion, feta, and semi-dried tomato tart: a perfect blend of sweet, salty, and savory flavors in a family-sized delight.
Ingredients:
  • 18.20 gm olive oil
  • 2 medium brown onions, halved, thinly sliced
  • 8.00 gm brown sugar
  • 2 tsp fresh thyme leaves
  • 2 sheets ready-rolled frozen shortcrust pastry, partially thawed
  • 4 eggs
  • 126.25 gm pure cream
  • 62.50 ml finely grated pecorino cheese (see note)
  • 250.00 ml semi-dried tomatoes
  • 70g feta, crumbled
Instructions:
  • In a saucepan over medium heat, sauté onion in oil until golden, about 15 to 20 minutes. Stir in sugar and 1 teaspoon of thyme, then set aside.
  • Prepare your 11.5cm x 34cm rectangular flan tin by lining the base and sides with pastry, trimming any excess. Chill in the freezer for 20 minutes. Meanwhile, preheat your oven to 200°C/180°C fan-forced.
  • 1. Arrange the tin on a baking tray. 2. Line the pastry case with baking paper and fill it with ceramic pie weights or uncooked rice. 3. Bake for 10-12 minutes until edges turn light golden. 4. Remove the weights or rice and baking paper, then bake for an additional 6-8 minutes until the base is light golden. 5. Allow it to cool slightly before lowering the oven temperature to 180°C/160°C fan-forced.
  • In a large jug, combine eggs, cream, cheese, salt, and pepper, whisking until smooth. Pour onion mixture onto pastry, add tomatoes and feta on top. Pour in the egg mixture and sprinkle with remaining thyme. Bake for 20-25 minutes until just set. Serve and enjoy!
