Caramelised onion and goat's cheese mini pizzas

Elevate any event with these gourmet mini pizzas, perfect for both kids and adults.
Ingredients:
  • 2 large pizza bases
  • 40.00 ml black olive tapenade
  • olive oil cooking spray
  • 50g goat's cheese, crumbled
  • Thyme sprigs, to serve
  • Extra virgin olive oil, to serve
  • 20g butter
  • 4 brown onions, thinly sliced
  • 20.00 ml thyme leaves
Instructions:
  • Prepare caramelized onions: Gently heat butter and oil in a large frying pan. Add onions and coat them with the mixture. Cover and cook on low heat for around 20 minutes until they turn light golden. Add thyme, then cook uncovered for 25-30 minutes until caramelized, stirring occasionally. Season with salt and pepper, then set aside off the heat.
  • Preheat the oven to 240°C. Cut 12 rounds from each pizza base using a 5cm round biscuit cutter. Thinly spread tapenade on the mini pizza bases, lightly spray with oil, and place them on a baking tray lined with parchment paper. Bake for 6 to 8 minutes until crisp.
  • Spread the warm caramelised onion on the pizza bases, layer with goat's cheese and a small sprig of thyme. Sprinkle with cracked black pepper, lightly drizzle with oil, and serve.
