Versatile vegetarian pasta dish, perfect as a main or side.
Ingredients:
  • 36.40 gm olive oil
  • 3 large onions, finely sliced
  • 1 kg green zucchini, sliced
  • Salt and pepper
  • 200ml cream
  • 100g parmesan, finely grated
  • 20.00 ml chopped dill, finely chopped
  • Fresh lasagne sheets
Instructions:
  • Preheat oven to 170°C. Sauté 3 large onions, finely sliced, and 2 crushed garlic cloves in 1 tablespoon of olive oil until caramelized, about 15 minutes. Remove from pan and let cool. Add another 1 tablespoon of olive oil to the same pan.
  • Sauté 1 kg of sliced green zucchini until beautifully golden. Sprinkle with salt and pepper. Mix 200ml cream, 100g finely grated parmesan, and 1 tablespoon of finely chopped dill. Layer an ovenproof baking dish with fresh lasagne sheets, cutting to fit.
  • Layer sliced onion and zucchini over the cream mixture. Repeat the layering process 3 times, ending with a pasta sheet and the remaining cream mixture. Bake for 30 minutes. Serve with steak or roast dinners.
