Caramelised onion potato salad

Irresistibly creamy and delicious potato side dish.
Ingredients:
  • 600g red onions, halved, thinly sliced
  • 30.00 ml white balsamic vinegar
  • 16.00 gm brown sugar
  • 1kg chat potatoes, halved (see note)
  • 125.00 ml thinly sliced chargrilled red capsicum
  • 123.75 gm whole-egg mayonnaise
  • 40.00 ml finely chopped fresh dill
  • 21.00 gm lemon juice
  • 20.00 ml drained baby capers, rinsed, drained, chopped
Instructions:
  • In a saucepan over medium heat, sauté onion in oil until golden, about 15-20 minutes. Stir in vinegar and sugar and cook for an additional 2 minutes until onion is caramelized and tender. Set aside.
  • In a large saucepan, add the potatoes and cover them with cold water. Bring to a boil over high heat, then reduce the heat to medium and cook for 10 to 12 minutes until the potatoes are just tender. Drain and let cool completely.
  • In a large bowl, mix together the onion mixture, potato, and capsicum. In a separate bowl, combine mayonnaise, dill, lemon juice, and capers. Season with salt and pepper, then add this mixture to the potato mixture. Toss everything together until well combined. Serve and enjoy!
