Caramelised tomato and goat's cheese bruschetta

Kick off your celebration with a simple yet stunning appetizer of roasted tomato and goat cheese.
Ingredients:
  • 250g cherry tomatoes, halved
  • 2 tsp fresh rosemary leaves, chopped
  • 8.00 gm brown sugar
  • 56.88 gm extra virgin olive oil, plus extra to serve
  • 8 thin slices crusty Italian bread
  • 80g marinated goat's cheese
Instructions:
  • Preheat your oven to 180C/160C fan-forced. Combine tomato, rosemary, sugar, and 2 tablespoons of oil in a roasting pan. Season with salt and pepper, ensuring everything is coated. Roast for 30 minutes until the tomato collapses and the juices caramelize. Allow it to cool before using.
  • Preheat the grill to high heat. Arrange the bread in a single layer on a large baking tray and brush both sides with the remaining oil. Grill each side for about 2 minutes, or until nicely toasted.
  • Spread goat's cheese on toast slices, then add caramelized tomatoes on top. Finish by drizzling with extra oil before serving.
