Transform oatmeal muffins into indulgent oatmeal cookie-like treats by caramelizing the oatmeal for a rich, deep flavor experience.
Ingredients:
  • 0.25 cup butter
  • 0.66666698455811 cup rolled oats
  • 0.66666698455811 cup brown sugar, divided
  • 0.25 teaspoon ground cinnamon
  • 0.25 teaspoon ground allspice
  • 0.66666698455811 cup water
  • 1.5 cups all-purpose flour
  • 0.33333298563957 cup rolled oats
  • 4 teaspoons baking powder
  • 2 teaspoons wheat germ
  • 1 egg, lightly beaten
  • 1 cup evaporated milk
  • 1.3333300352097 cups raisins
  • 1 tablespoon all-purpose flour
Instructions:
  • Preheat your oven to 375 degrees F (190 degrees C) and prepare a muffin pan by lightly greasing it or using paper liners.
  • In a skillet, melt butter over medium heat. Toast 2/3 cup oats, 1/3 cup brown sugar, cinnamon, and allspice until they turn golden. Pour in 2/3 cup water and add the rest of the brown sugar. Simmer until slightly thickened. Take off the heat and let it cool down.
  • In a large bowl, mix together flour, 1/3 cup uncooked oats, baking powder, and wheat germ. In a separate bowl, whisk egg and evaporated milk. Create a well in the middle of the dry ingredients, pour in the egg mixture and cooked oatmeal, and stir until just combined. Toss raisins in 1 tablespoon flour, then gently fold into the batter. Spoon the batter into muffin cups.
  • Bake in a hot oven for 25-30 minutes.
