Caramelized Onion-Shrimp Spread

Impress guests with quick and delicious onion-shrimp appetizer, ready in just 30 minutes!
Ingredients:
  • 1 tablespoon butter (do not use margarine)
  • 1/2 medium onion, thinly sliced (about 1/2 cup)
  • 1/4 cup apple jelly
  • 1 container (8 oz) reduced-fat cream cheese, softened
  • 1 bag (4 oz) frozen cooked salad shrimp, thawed, well drained (about 1 cup)
  • 1 teaspoon chopped fresh chives
  • 36 whole-grain crackers
Instructions:
  • In a 1-quart saucepan, gently melt butter over medium-low heat. Saute onion for 15 minutes, stirring often. Add garlic and cook for 1 more minute until fragrant and golden. Mix in apple jelly and stir until melted. Take off heat and allow to cool for 5 minutes before using.
  • In a small bowl, combine cream cheese and shrimp. Spread the mixture into a 5-inch round on an 8-inch plate.
  • Generously top the savory onion mixture over the succulent shrimp blend. Enhance with a sprinkle of fresh chives. Enjoy with crisp crackers on the side.
