Exotic cardamom enhances tropical fruit salad.
Ingredients:
  • 1/2 (about 820g) pineapple, peeled, cored
  • 1/4 (about 400g) pawpaw, deseeded, peeled
  • 20g (1 tbsp) butter
  • 32.00 gm brown sugar
  • 1/2 tsp ground cardamom
  • 60ml (1/4 cup) fresh orange juice
  • Mango flavoured frozen yoghurt, to serve
Instructions:
  • Slice the pineapple and pawpaw into 1cm-thick rounds, then arrange them beautifully on serving plates.
  • In a small saucepan over medium heat, melt butter. Stir in brown sugar and cardamom, cook for 1 minute until sugar dissolves. Add orange juice, bring to a boil, then simmer uncovered for 1 minute until sauce slightly reduces.
  • Drizzle sauce over fresh fruit and serve with a scoop of frozen yogurt.
