Tender chicken breast coated in sweet and spicy breading, baked with grapefruit and nectarine juice.
Ingredients:
  • 1 teaspoon paprika
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1 teaspoon dried parsley
  • 0.5 teaspoon dried oregano
  • 1 teaspoon pepper
  • 4 boneless, skinless chicken breast halves
  • 0.25 cup duck sauce
  • 0.25 cup marinara sauce
  • 1 teaspoon mango hot sauce
  • 0.75 cup fresh pink grapefruit juice, divided
  • 1 cup Italian seasoned bread crumbs
  • 1 ripe nectarine, pitted and sliced
Instructions:
  • Preheat your oven to 375 degrees F (190 degrees C) and prepare a baking dish by lining it with parchment paper.
  • Combine paprika, onion powder, garlic powder, parsley, oregano, salt, and pepper in a large bowl. Coat chicken breasts with the seasoning mixture. In another bowl, mix duck sauce, marinara sauce, mango hot sauce, and 1/4 cup grapefruit juice. Coat the seasoned chicken with the sauce. Dredge chicken in bread crumbs until evenly coated. Transfer chicken to a baking dish and arrange nectarine slices around the edges.
  • Bake the chicken in the preheated oven for 15 minutes. Then, flip the chicken, drizzle 1/2 cup of grapefruit juice over it, and bake for an additional 15 minutes until fully cooked.
