Carrot, bean sprout and sesame salad

Crunchy salad with sweet soy and peanut dressing.
Ingredients:
  • 24.00 gm sesame seeds
  • 1 carrot, peeled, cut into matchsticks
  • 110g bean sprout
  • 3 green onions, ends trimmed, thinly sliced diagonally
  • 1/2 baby wombok (Chinese cabbage), finely shredded
  • 21.00 gm light soy sauce
  • 20.00 ml white vinegar
  • 18.20 gm peanut oil
  • 4.00 gm brown sugar
  • 1 tsp sesame oil
Instructions:
  • Toast sesame seeds in a small frying pan over medium heat, tossing occasionally, for 1-2 minutes until fragrant. Set aside.
  • In a large bowl, combine carrot, bean sprouts, green onion, wombok, and sesame seeds. Toss gently to mix. Portion into individual serving containers.
  • For the dressing, add soy sauce, vinegar, peanut oil, sugar, and sesame oil to a screw-top jar. Shake vigorously until fully mixed. Adjust seasoning with salt and pepper to taste.
  • Drizzle dressing over salads and serve promptly.
