Add crunchy carrot slices to your lunch for a midday energy boost!
Ingredients:
  • 165g raw sugar
  • 175ml sunflower oil
  • 3 eggs, lightly beaten
  • 1 large carrot (about 140g), grated
  • 100g raisins
  • Grated zest of 1 large orange
  • 175g self-raising flour
  • 2.50 gm ground cinnamon
  • 1/2 tsp freshly grated nutmeg
  • 55g icing sugar
Instructions:
  • Preheat your oven to 180°C and generously grease and line a 28cm x 18cm slice pan for flawless baking results.
  • In a large bowl, mix sugar, oil, and egg with a wooden spoon. Add carrot, raisins, and zest. Sift in flour, soda, and spices. Stir gently until combined, then transfer mixture to the pan. Bake for 20-25 minutes until a skewer inserted in the center comes out clean. Allow to cool briefly, then flip onto a wire rack to cool completely.
  • For the icing, sift icing sugar into a bowl and blend with 1-2 teaspoons warm water until smooth and soft. Drizzle over slice using a teaspoon, then let it set for 10 minutes. Or, dust with 2 tablespoons sifted icing sugar. Cut into 12 bars.
