Zucchini, carrot & ham slice

Versatile slice perfect for lunch boxes, loved by all ages!
Ingredients:
  • 9.20 gm olive oil
  • 150g sliced ham, finely chopped
  • 1 brown onion, finely chopped
  • 6 eggs
  • 80ml milk
  • Salt & freshly ground pepper
  • 350g (about 3) zucchini, coarsely grated, excess moisture squeezed
  • 250g (about 2) carrots, coarsely grated
  • 50g plain flour
  • Salad, to serve
Instructions:
  • 1. Preheat your oven to 200°C. 2. Line an 18cm-square cake pan with non-stick baking paper. 3. Heat oil in a non-stick frying pan over medium heat. 4. Sauté ham and onion for 8-10 minutes until soft, stirring occasionally. 5. Drain on paper towel and let cool for approximately 10 minutes.
  • Combine eggs and milk, season with salt and pepper, then mix in zucchini, carrot, and ham. Add flour, transfer to pan, and level the top. Bake for 30-35 minutes until golden and set. Rest in pan for 15 minutes, then slice and enjoy with a side of salad.
