Cast Iron Skillet Seared Salmon

Crispy-skinned salmon fillets are pan-seared in a covered cast iron skillet for a perfect blend of saltiness and tenderness.
Ingredients:
  • 3 (8 ounce) center-cut salmon fillets, with skin
  • 1 teaspoon garlic-pepper seasoning
  • 0.5 teaspoon dried dill weed
  • 1 tablespoon salt
Instructions:
  • Dry fillets with a paper towel and place in a baking dish, skin-side down. Season with garlic-pepper and dill. Flip fillets and generously rub salt over the skin. Cover the dish and let it rest on the counter for 15 to 20 minutes.
  • Begin by heating oil in a large cast iron skillet until it shimmers slightly. Then, lower the heat to medium-high and add the butter. Once the butter has melted, place the fillets in the skillet skin-side down. Cover and cook until the fish easily flakes with a fork, about 7 to 9 minutes, adjusting for thickness. Using a metal spatula, carefully remove the fillets and serve promptly.
