Indulge in our elegant spinach, blue cheese, and cauliflower frittata for a gourmet meal.
Ingredients:
  • 1 leek, washed, halved lengthways, thinly sliced
  • 350g cauliflower (about 1/2 small) cut into small pieces
  • 100g baby spinach leaves
  • 80g mild creamy blue cheese
  • 125ml cream
  • Salt & freshly ground pepper
  • Dressed salad leaves, to serve
Instructions:
  • Preheat your oven to 180°C and prepare a 20cm square cake pan by greasing and lining it with non-stick baking paper.
  • In a large non-stick frying pan over medium heat, sauté leek, cauliflower, and garlic in oil for 5-6 minutes until leek is tender. Stir in spinach off the heat until leaves just wilt.
  • 1. Evenly layer cauliflower mixture in a lined pan. Sprinkle on crumbled blue cheese. 2. Combine eggs and cream, season with salt and pepper. Pour mixture over blue cheese. 3. Bake for 25-30 minutes until puffed and golden brown. 4. Let it rest for 10 minutes before serving.
  • Slice the frittata into individual portions and enjoy while still warm alongside a fresh salad.
