Savor delicious cauliflower parmigiana with crispy Progresso® bread crumbs - a flavorful Italian side.
Ingredients:
  • 1 cauliflower (about 1 1/2 lbs), separated into large florets
  • Salt and freshly ground black pepper
  • 3 tablespoons unsalted butter
  • 1/3 cup freshly grated Parmesan cheese
  • 1/2 cup Progresso™ lemon pepper panko crispy bread crumbs
Instructions:
  • Preheat oven to 425°F and generously butter a 10x8-inch oval baking dish or equivalent size.
  • 1. Bring a pot of well-salted water to a vigorous boil. Cook the cauliflower until slightly tender yet crisp, approximately 3 minutes. Drain thoroughly, then slice lengthwise into stems about 1/4 inch thick.
  • Layer the slices neatly in the baking dish, ensuring they overlap. Season generously with salt and freshly ground black pepper, and place thin slices of butter throughout. Top with the desired amount of cheese and bread crumbs.
  • Bake without a cover until the top is lightly browned, approximately 30 minutes. Serve while hot.
