Transform cauliflower and cheese into delectable baked tots for a tasty and simple snack.
Ingredients:
  • 1 egg white
  • 1 large head cauliflower, broken into florets
  • 0.5 cup bread crumbs
  • 0.5 cup shredded Parmesan cheese
  • 1 egg
  • 1 tablespoon minced onion
  • 1 tablespoon parsley flakes
  • salt and ground black pepper to taste
  • canola oil cooking spray
Instructions:
  • Preheat your oven to 400 degrees F (200 degrees C) and prepare a baking sheet by lining it with parchment paper.
  • 1. Set up a steamer in a saucepan, filling with water just below the steamer. Bring to a boil. 2. Steam cauliflower covered until tender, approximately 3 minutes. 3. Drain and allow to cool before handling.
  • Finely chop cauliflower until it resembles rice grains.
  • In a large bowl, combine 2 cups cauliflower "rice", bread crumbs, Parmesan cheese, egg, egg white, parsley flakes, minced onion, salt, and black pepper. Shape mixture into 30 small logs and place them on a lined baking sheet. Give them a light spray with cooking spray before baking.
  • Place in the preheated oven until the bottom is lightly browned for 8 to 9 minutes. Then, flip, spray with cooking spray, and bake until the other side is lightly browned, another 8 to 9 minutes.
