Indulgent chanterelle mushroom sauce with Gorgonzola and sherry, perfect for drizzling over meat, fish, or mashed potatoes.
Ingredients:
  • 3 tablespoons unsalted butter
  • 3 tablespoons all-purpose flour
  • 2 cups sherry wine
  • 1 cup vegetable broth
  • 0.25 cup crumbled Gorgonzola cheese, or to taste
  • 4 cups diced chanterelle mushrooms
  • 1 tablespoon salt-free seasoning blend
  • 0.5 teaspoon ground black pepper
Instructions:
  • In a saucepan over gentle heat, melt butter until sizzling. Add flour and stir until it turns into a delightful golden paste, around 5 minutes. Slowly pour in sherry wine and broth, whisking constantly until it thickens and bubbles. Lower the heat to simmer.
  • Melt Gorgonzola cheese into the sauce. Stir in mushrooms, seasoning blend, and pepper. Simmer over medium-low heat until the sauce thickens, about 30 minutes, resembling heavy rain hitting the ground with bubbling.
