Use earthy chanterelles or any wild/store-bought mushrooms for a delicious dish.
Ingredients:
  • 1 tablespoon butter
  • 1 tablespoon olive oil
  • 1 onion, finely chopped
  • 1 clove garlic, crushed
  • 4 cups chanterelle mushrooms, cleaned and chopped
  • 3 tablespoons all-purpose flour
  • 2 cups boiling water
  • 1 cube chicken bouillon
  • 1 teaspoon ground thyme
  • 1 dash ground white pepper
  • 1 pinch ground nutmeg
Instructions:
  • In a heavy-bottomed pot, gently heat butter and oil. Add onion and garlic, cover, and cook for 20 minutes until soft.
  • Turn the heat up to medium and stir in the earthy chanterelle mushrooms. Give them a dusting of flour and slowly pour in the piping hot water, stirring continuously. Season with rich chicken bouillon, aromatic bay leaves, fragrant thyme, subtle white pepper, and a hint of nutmeg. Let it gently simmer until the mushrooms are tender and flavors meld beautifully, about 15 to 20 minutes.
  • Discard bay leaves, then blend chanterelle soup with an immersion blender until silky smooth.
