Grilled eggplant with zesty garlic ginger sauce - a flavorful and healthy side dish for any occasion!
Ingredients:
  • 8 baby eggplant, halved lengthways
  • 36.80 gm vegetable oil
  • Sliced green onion, to serve
  • 2.50 gm cornflour
  • 10.60 gm soy sauce
  • 24.40 gm oyster sauce
  • 2.25 gm white sugar
  • 2cm piece fresh ginger, finely grated
  • 2 garlic cloves, crushed
Instructions:
  • Create a flavorful Garlic Ginger Sauce by blending cornflour with water in a saucepan until smooth. Whisk in soy sauce, oyster sauce, sugar, ginger, and garlic. Cook over medium heat, stirring occasionally, until sauce thickens, for about 2 minutes. Remove from heat and enjoy!
  • Coat the sliced eggplant with a generous brush of oil.
  • Preheat a barbecue grill or chargrill pan on high. Grill eggplant, cut-side down, until charred, about 3 minutes. Flip and grill until tender, about 2 minutes. Place cut-side up on a serving plate, drizzle with sauce, and garnish with green onion before serving.
