Whip up a quick, flavorful, and healthy Asian chicken dinner.
Ingredients:
  • 750ml (3 cups) water
  • 300g (1 1/2 cups) Basmati rice, rinsed well under cold water
  • 95g (1/4 cup) hoisin sauce
  • 20.00 ml tamari (wheat-free soy sauce)
  • 1 garlic clove, crushed
  • 1 tsp finely grated fresh ginger
  • 4 (about 200g each) single chicken breast fillets
Instructions:
  • In a saucepan, bring water to a boil. Add rice and simmer on medium-low heat with the lid on for 10-12 minutes until tender. Let it stand covered for 5 minutes before serving.
  • Combine hoisin sauce, tamari, garlic, and ginger in a bowl. Pour the hoisin mixture over the chicken in a large bowl and gently toss to coat. Let it sit for 5 minutes to enhance the flavors.
  • Preheat a barbecue grill or chargrill pan on medium heat. Grill chicken for 7-8 minutes on each side until fully cooked. Slice the chicken thickly against the grain.
  • Plate the Asian watercress salad, add chicken on top, and serve with rice.
