Chargrilled kipfler potato salad recipe

Savor this quick and tasty chargrilled kipfler potato salad as the perfect side dish!
Ingredients:
  • 500g kipfler potatoes
  • 18.20 gm olive oil
  • 4 slices prosciutto
  • 1 red onion, cut into wedges
  • 80ml buttermilk
  • 75g mayonnaise
  • 20.00 ml apple cider vinegar
  • 20.00 ml drained baby capers
  • 20.00 ml finely chopped dill
  • 20.00 ml finely chopped mint
  • 1 tsp horseradish cream
  • 120g pkt Baby Rocket
Instructions:
  • In a large saucepan, cover the potatoes with cold water and bring to a boil over high heat. Cook for 10 minutes or until the potatoes are just tender. Drain well and allow them to cool slightly before proceeding.
  • Preheat a chargrill to medium-high heat. Slice the potatoes diagonally, then place them in a bowl. Season with your favorite spices, drizzle with oil, and add minced garlic. Gently mix everything together. Grill the potatoes in 3 batches for 1-2 minutes on each side until they develop a nice char. Serve on a plate.
  • Grill the prosciutto until crisp, about 1 minute per side, then plate it with the potato. Grill the onion until just charred, about 1-2 minutes per side.
  • Combine the buttermilk, mayonnaise, vinegar, capers, dill, mint, and horseradish in a bowl, whisk until well blended, and season to taste.
  • Assemble the potatoes, onions, and rocket on a platter. Roughly chop the prosciutto and scatter over the vegetables. Finish by drizzling with the dressing.
