Chargrilled mango with cherry syrup

Celebrate summer with a stunning mango and cherry dessert.
Ingredients:
  • 1 vanilla bean, halved lengthways
  • 107.50 gm caster sugar
  • 200g cherries, pitted
  • 4 small mangoes
  • 59.40 gm firmly packed brown sugar
  • olive oil cooking spray
  • 240.00 gm vanilla custard
Instructions:
  • Scrape the seeds from the vanilla bean halves. Combine caster sugar and 1/2 cup of cold water in a saucepan over low heat. Stir in the vanilla bean and seeds. Increase heat and bring to a boil, then reduce to medium heat and simmer for 2 to 3 minutes until slightly thickened. Add the cherries and take the saucepan off the heat.
  • Slice the cheeks off the mangoes and remove the stones. Score each mango cheek with 3 vertical and 3 horizontal lines, being careful not to cut all the way through. Spread brown sugar on a plate and gently press the cut sides of the mangoes into the sugar.
  • Prepare the chargrill by lightly spraying it with oil and heating it over medium heat. Cook the mango cheeks with the cut side down for 2 to 3 minutes until they are lightly browned.
  • Remove the aromatic vanilla bean from the fragrant syrup. Divide the ripe mango between individual serving bowls. Top the mango with vibrant cherries and a drizzle of the aromatic syrup. Finish by elegantly drizzling with luscious custard and serve immediately to indulge in this delightful dessert.
