Indulge in a decadent finale with grilled mangoes and creamy ice cream.
Ingredients:
  • 36.00 gm white sugar
  • 1 lime, rind finely grated
  • 62.50 ml mint leaves
  • 2 mangoes
  • 4 scoops low-fat ice-cream, to serve
Instructions:
  • Pulse sugar, lime rind, and mint in a food processor until blended.
  • Preheat the barbecue plate to medium-high heat. Slice off 2 cheeks from each mango, keeping the cuts as close to the stone as possible. Lay down a sheet of baking paper on the barbecue plate. Place the mango halves, flesh side down, on the paper and grill for 4 to 5 minutes until they turn golden brown.
  • Score each mango cheek with 3 vertical and 3 horizontal lines, without cutting them all the way through. Turn the mango skin inside out, then place the cheeks on serving plates. Sprinkle with lime and mint sugar, and serve with ice-cream.
