Chargrilled mango cheeks with maple rum sauce

Caramelize chargrilled mangoes with a touch of sugar for a sweet and indulgent treat.
Ingredients:
  • 4 large ripe mangoes, cheeks removed, peeled
  • 70g (1/3 cup) caster sugar
  • Canola oil spray
  • 40.00 ml dark rum
  • 60ml (1/4 cup) maple syrup
  • Double cream, to serve
Instructions:
  • Prepare a baking tray with non-stick baking paper. Arrange the mango cheeks, cut-side up, on the tray and sprinkle with half of the sugar.
  • Preheat a large chargrill or barbecue flat plate over medium-high heat and lightly spray with oil. Place the mango, sugar-side down, and cook for 2-3 minutes until caramelized and golden. Sprinkle with the rest of the sugar, flip, and cook for another 2-3 minutes until golden. Serve on plates.
  • In a medium saucepan over medium heat, melt butter until foamy. Stir in rum and cook for 30 seconds until slightly reduced. Add maple syrup and cook, stirring, for 2-3 minutes until slightly thickened. Let cool for 2 minutes, then drizzle over mango and serve with double cream.
