Chargrilled veg kebabs

Tasty charred kebabs, great for outdoor dining with a salad or in a big feast. Kid-friendly favorite!
Ingredients:
  • 50 g ciabatta
  • 1 yellow pepper
  • 150 g halloumi cheese
  • 1 courgette
  • 180 g chestnut mushrooms
  • 2 red onions
  • 1 fresh red chilli optional
  • 1 lemon
  • extra virgin olive oil
  • 2 sprigs of fresh rosemary
  • 200 g cherry tomatoes
Instructions:
  • Submerge 12 wooden skewers in a large roasting tray of cold water. Remove crusts from ciabatta and cut into 2cm chunks. Cut pepper and halloumi into 2.5cm chunks and add to a large mixing bowl. Peel courgette into ribbons and add to the bowl. Cut mushrooms, onions, and chilli as directed and add to the bowl. Grate lemon zest, drizzle 2 tablespoons olive oil, chop rosemary, and add cherry tomatoes to the bowl. Mix well and refrigerate if desired. Thread ingredients onto skewers, ensuring they are not too close together. Cook skewers on a preheated griddle pan for about 8 minutes, turning every 2 minutes until golden brown. Serve with salad and rice or flatbreads.
