Quick and easy roast chicken with crispy potatoes, ready in just 45 minutes, ideal for busy weeknights.
Ingredients:
  • 800g chat potatoes or other small potatoes
  • 75g unsalted butter, softened
  • 20.00 ml chopped thyme leaves
  • 20.00 ml chopped oregano leaves, plus extra to serve
  • Finely grated zest of 1 lemon
  • 8 chicken drumsticks (skin on)
  • 36.40 gm extra virgin olive oil
Instructions:
  • Preheat your oven to 220C (200C fan-forced) and line a large roasting pan with baking paper. Place the potatoes cut-side down on a chopping board and make thin, evenly spaced cuts two-thirds of the way through. Transfer them to the prepared pan, and repeat with the rest of the potatoes.
  • Mix butter, garlic, thyme, oregano, and lemon zest in a bowl, season, then gently separate skin from chicken drumstick. Spread butter mixture under the skin, securing it to the flesh with a toothpick. Repeat for remaining drumsticks, and dot any leftover butter over the top.
  • Drizzle oil over the potatoes and season. Arrange the chicken on top of the potatoes, then add the halved zested lemon to the tray. Roast for 30 minutes or until golden and cooked through.
  • Enhance the flavor by adding a sprinkle of extra oregano on the chicken. Serve with a refreshing squeeze of lemon over the chicken and potatoes.
