Whip up a delicious no-cook chicken, lentil, and kale salad in minutes.
Ingredients:
  • 400g can lentils, rinsed, drained
  • 750.00 ml shredded Hot Roast Chicken
  • 100g coarsely torn kale leaves
  • 60g pkt Baby Rocket
  • 2 celery sticks, thinly sliced
  • 1 red capsicum, seeded, thinly sliced
  • 100g semi-dried tomatoes
  • 1/2 small red onion, thinly sliced
  • 40.00 ml red wine vinegar
  • 36.40 gm extra virgin olive oil
  • 1 garlic clove, crushed
  • 75g cashew
Instructions:
  • Place the lentils in a heatproof bowl and cover them with boiling water for 2 minutes. Drain them well before placing them in a separate bowl.
  • Combine the chicken, kale, rocket, celery, capsicum, tomato, and onion with the lentils in the bowl and toss them together.
  • Combine the vinegar, oil, and garlic in a small bowl, whisking until well blended. Season to taste, then add this flavorful mixture to the chicken and gently toss everything together.
  • Transfer the salad onto a beautiful platter and sprinkle with delicious cashews before serving.
