Delightful cheese pastries, perfect for picnics or enjoying warm from the oven.
Ingredients:
  • 300g (2 cups) plain flour
  • 8.00 gm baking powder
  • 1.25 gm bicarbonate of soda
  • 2.40 gm salt
  • 1.25 gm sweet paprika
  • 125g chilled unsalted butter, chopped
  • 125g vintage cheddar, coarsely grated
  • 250ml (1 cup) buttermilk
  • 1 egg, lightly whisked
  • 20.80 gm buttermilk, extra
  • Sweet paprika, extra, to sprinkle
  • Butter, at room temperature, to serve
Instructions:
  • Preheat your oven to 180ºC and prepare a large baking tray by lining it with non-stick baking paper.
  • In a large bowl, mix together flour, baking powder, bicarbonate of soda, salt, and paprika. Use your fingertips to blend the unsalted butter into the mixture until it looks like coarse breadcrumbs. Gently fold in the cheddar cheese, then pour in the buttermilk. Using a fork, combine the ingredients until the dough forms.
  • With floured hands, combine dough in the bowl, then transfer to a lightly floured surface and shape into a 3cm-thick disc. Use a 6cm round pastry cutter to cut out 10 discs from the dough, reshaping the leftover dough as needed. Arrange the discs 2cm apart on the prepared tray.
  • In a bowl, mix the egg and extra buttermilk. Brush the tops of the discs with the egg mixture, sprinkle with a little extra paprika, and bake for 25-30 minutes, turning the tray halfway through, until crisp and golden. Serve with butter.
