Indulge your loved ones with these irresistible cheese biscuits, sure to be a hit with the whole family!
Ingredients:
  • 250.00 ml plain flour
  • 75g butter, chilled, chopped
  • 70g cheddar cheese, finely grated
  • 1 egg yolk
  • 40.00 ml poppy seeds
  • Tomato chutney, to serve
  • Extra cheddar, to serve
Instructions:
  • In a food processor, blend the flour and butter until they form fine breadcrumbs. Then, add the cheese and blend until fully combined.
  • Lightly whisk one egg yolk and 2 tablespoons cold water together using a fork. Transfer the mixture to a food processor and pulse until it forms small clumps. Place the dough on a work surface and gently press it together to form a smooth dough, being careful not to over handle. Shape the dough into a 22cm-long log, flatten the base, and pinch the edges. Rotate the log twice more, pressing and pinching to create a triangular log that is about 25cm long.
  • Spread the poppy seeds on a sheet of baking paper. Roll the log in the poppy seeds until coated. Wrap it in the paper and freeze for 20 minutes, or until firm.
  • Preheat the oven to 180°C and line a large baking tray with parchment paper. Slice the log into 1cm thick pieces and place them flat on the tray. Bake for 15 minutes until lightly golden. Let them cool for 5 minutes on the tray before transferring to a wire rack to cool completely. Serve with tomato chutney and cheddar for a delicious treat.
