Cheddar and chive scones: savory teatime delight, ideal with butter or chutney as a meal complement.
Ingredients:
  • 1.75 cups all-purpose flour
  • 4 teaspoons baking powder
  • 1 teaspoon dried chives
  • 0.125 teaspoon salt
  • 0.125 teaspoon cayenne pepper
  • 5 tablespoons cold unsalted butter, cut in small pieces
  • 1.25 cups shredded aged Cheddar cheese, divided
  • 0.5 cup whole milk
  • 0.25 cup sour cream
  • 2 tablespoons whole milk
Instructions:
  • Preheat your oven to a toasty 400 degrees F (200 degrees C) and generously grease a baking sheet.
  • In a large bowl, combine flour, baking powder, chives, salt, and cayenne pepper. Add butter and mix until pea-sized lumps form. Gently fold in 1 cup of cheese. In a measuring cup, whisk together 1/2 cup milk and sour cream. Pour the mixture into the flour and stir until well combined. Be careful not to overwork the dough.
  • Shape dough into balls (2 to 3 inches each) with floured hands. Arrange on baking sheet, gently flatten, allowing scones to lightly touch. Brush tops with remaining milk and sprinkle with remaining cheese. Rest dough for approximately 10 minutes.
  • Bake in the oven until tops are golden brown, about 10-15 minutes. Allow to cool slightly, then gently break apart scones before serving.
