Cheesy Cheddar and Egg Bake with Rye Bread, Tomatoes, and Grilled Onions.
Ingredients:
  • 1 teaspoon vegetable oil
  • 2 medium onions, sliced
  • 8 slices rye bread
  • 2 tablespoons Dijon mustard
  • 1 1/2 cups shredded Cheddar cheese (6 ounces)
  • 1 large tomato, seeded and coarsely chopped (1 cup)
  • 1 1/2 cups milk
  • 4 eggs
Instructions:
  • 1. Preheat your oven to 300°F. 2. Grease an 8x8x2 inch square baking dish with cooking spray. 3. Heat oil in a 10-inch nonstick skillet over medium-high heat. 4. Sauté onions in the oil for 6 to 8 minutes until they are golden brown; then, remove from heat.
  • Remove crusts from the bread slices. Spread a generous layer of mustard on one side of each slice. Place 4 slices, mustard side up, in a baking dish. Top with 1 cup of cheese, tomato, and onions. Place the remaining slices, mustard side down, over the onions. In a separate bowl, whisk together the milk and eggs until smooth. Pour the mixture evenly over the layered bread.
  • Bake for about 1 hour until the center is set and the bread is golden brown. Sprinkle with the remaining 1/2 cup of cheese and let it stand for 10 minutes before cutting.
