Spicy Cheese and Chilli Chicken Quesadilla: A flavorful twist on a classic favorite!
Ingredients:
  • 3 tomatoes, diced
  • 1 shallot, sliced
  • 1 avocado, flesh diced
  • 62.50 ml chopped fresh coriander, plus extra to garnish
  • 10.60 gm fresh lime juice
  • 18.20 gm olive oil
  • 332.50 ml coarsely grated tasty cheese
  • 8 flour tortillas
  • 1/2 barbecued chicken, shredded
  • 1 small fresh red chilli (deseeded if desired), finely chopped
Instructions:
  • In a bowl, mix together the tomato, shallot, avocado, coriander, lime juice, and half of the oil. Season with salt and pepper to taste.
  • Layer 4 tortillas with half of the cheese, chicken, chili, remaining cheese, and top with the remaining tortillas.
  • In a large non-stick frying pan over medium heat, heat the remaining 1/2 teaspoon of oil. Add 1 tortilla stack carefully and cook each side for 2 minutes, or until golden. Repeat with the rest of the oil and tortilla stacks.
  • Cut the quesadillas into delicious wedges and arrange them on serving plates. Serve alongside the flavorful salsa.
