Cheesy herb-infused mashed potatoes steal the show.
Ingredients:
  • 2kg Desiree potatoes, peeled, cut into large chunks
  • 125g butter, chopped
  • 386.25 gm milk
  • 82.50 ml flat-leaf parsley leaves, roughly chopped
  • 82.50 ml mint leaves, roughly chopped
  • 62.50 ml dill sprigs, roughly chopped
Instructions:
  • In a saucepan, cover potatoes with cold water and bring to a boil. Simmer over medium heat for 20-25 minutes until tender. Drain well, then return to the saucepan over low heat. Shake gently to remove any excess water and mash potatoes roughly.
  • Combine butter and milk with the potatoes until they are fluffy. Fold in cheese, parsley, mint, dill, salt, and pepper. Serve and enjoy.
