Cheese puffs - perfect for any occasion! Enjoy them as bite-sized snacks, pair with your favorite drink, or fill with endless delicious possibilities like ham, chicken, or creamy tuna salad.
Ingredients:
  • 1 cup all-purpose flour
  • 0.5 teaspoon fresh ground black pepper
  • 0.5 teaspoon dried thyme
  • 0.5 teaspoon chili powder
  • 1 pinch cayenne pepper
  • 1 cup whole milk
  • 1 stick butter (cut into 1/2 inch cubes)
  • 6 large eggs (at room temperature)
  • 0.5 cup grated Parmesan or Romano cheese
  • 0.75 cup grated Gruyere cheese
  • 1 ounce pepperoni, diced
  • 2 tablespoons milk
  • 2 tablespoons grated Parmesan cheese
Instructions:
  • Preheat your oven to a toasty 425 degrees F (220 degrees C).
  • In a large bowl, mix together the flour, salt, black pepper, thyme, chili powder, and cayenne pepper.
  • Combine the milk and butter in a large saucepan and bring to a gentle boil. Once the butter is fully melted, reduce the heat to low. Quickly add the seasoned flour all at once, stirring vigorously with a wooden spoon until a dough ball forms. Remove from heat.
  • Divide the egg, reserving the yolk for glazing.
  • Transfer the dough to a large mixer bowl. Beat at medium speed for 1 minute. Add 1 egg and 1 egg white, beating until fully absorbed. Gradually add the remaining 4 eggs one at a time, ensuring each egg is fully incorporated before adding the next. The dough will be smooth and satiny once all 5 eggs (including the egg white) are mixed in.
  • Mix in the Parmesan and Gruyere cheeses, and add pepperoni if desired, ensuring they are fully incorporated into the dough.
  • Pipe dough onto 2 ungreased baking sheets using a pastry bag or teaspoon. Make tiny puffs 1/2 inch in diameter, small appetizers 1 inch, and puffs for filling 1 1/2 inches. Keep puffs uniform for even baking, spacing them 1 inch apart.
  • Prepare a glaze by whisking the last egg yolk with 2 tablespoons of milk. Gently brush the tops of the puffs with the glaze before baking, then sprinkle with Parmesan cheese.
  • Bake in a pre-heated oven for 10 minutes (5 minutes for tiny puffs). Then, lower the temperature to 300°F (150°C) and bake for an additional 10 minutes for tiny puffs, or 15 to 20 minutes for medium or large puffs, until they turn golden brown. To check for doneness, remove a puff, break it open, and ensure the inside is baked through. If it's still doughy, bake for another 5 minutes.
  • Take the pans out of the oven and allow the puffs to cool to the perfect serving temperature right on the pans.
